MALTED CHOCOLATE CUPCAKES

we moved into a new studio that is more residential than our last location and i’m feeling very hopeful and excited about the possibility of starting an herb garden. we have a little outdoor space and i think it would be perfect considering how much we cook and how many herbs we buy from the store. i also love the idea of knowing exactly where our produce comes from and how it was treated. cooking with real ingredients is becoming increasingly important to us which is one of the reasons we love the Essential Goodness baking mixes by King Arthur Flour. they’re made with simple, real ingredients and they taste as good as something you’d make from scratch (but take wayyy less time).

several weeks ago we posted about the cheesecake bars we made with King Arthur Flour’s new line of Essential Goodness baking mixes. this time, we made their malted milk chocolate cupcakes (a mix that’s available exclusively at Target) and they couldn’t have been easier. the malt flavor is not overwhelming and provides a really nice depth of flavor paired with the milk chocolate.

we finished the cupcakes off with an array of edible flowering herbs, all of which could be removed before eating, if desired, but are also safe to eat. also, as an aside, my number one tool when it comes to frosting is this spatula. we use it all the time, it’s a game changer.

i can’t tell you how much i appreciate these box mixes and the fact that they are both reasonably priced and not full of junk (they also donate the cost of 1 meal to Feeding America for every box sold!). there are so many times that we’re going on a road trip or camping and i want a quick and easy dessert option and these fit that need perfectly. i made the cinnamon puff muffins for my out of town guests and they were a hit!

MARSHMALLOW CUPCAKES

toasted marshmallow cupcakes, need i say more? s’mores might be my favorite dessert so these cupcakes really hit the spot, super simple and delicious. they’d be perfect for a halloween party or the next time you need to bring a dish to pass!

makes 12 cupcakes or 6 large cupcakes 

Ingredients:
• chocolate cake mix (including ingredients required to make this mix)
• marshmallow fluff
• 1 package of graham crackers crushed
• 1/4 cup butter
• 3 tablespoons cocoa powder
• 1/4 cup whole milk
• 2 cups powdered sugar
• 1 teaspoon vanilla

What you’ll need to top the cupcakes
pastry bag
• kitchen torch

• Preheat oven to 350 degrees. Follow the mixing directions on your chocolate cake mix. We used a cupcake tin that makes 6 large cupcakes. Using cupcake paper liners, drop the cake mix about three quarters of the way. Place in the oven and bake for 18-21 minutes, or until a toothpick comes out smooth when poking the cupcakes.

• We like having our frosting homemade and love this recipe found here.

• Here comes the fun part! To start layering your cupcakes. Fill a pastry bag with chocolate frosting and and give a generous layer of frosting to each cupcake. Using a spoon drop a scoop of marshmallow fluff right on top (mini marshmallows are another great option as they can stack well and stick to the frosting) Using the kitchen torch, lightly brown the marshmallows. Crush one to two graham crackers and garnish the tops of each cupcakes.

PEANUT BUTTER BANANA MINI PIES

certain recipes and foods are really nostalgic for me and this recipe happens to be one of them. my dad use to bring this peanut butter banana pie home for my mom on her birthday from the fancy bakery in town and it was exciting for everyone. somehow my mom managed to snag the recipe and it definitely stands the test of time and is truly one of my favorite desserts. we’re sharing the recipe below with one small change, mini pies instead of full size! -joanie

Peanut Butter Banana Mini Pies
adapted from the Amway Grand Hotel
serves: 12

ingredients:
• 6 1/4 ounce cream cheese (room temperature)
• 7 1/8 ounce powdered sugar
• 2 teaspoons vailla
• 3/4 cup peanut butter
• 2 1/2 cups whipping cream
• 1 cup good quality semi sweet chocolate chips, divided
• 4 bananas, sliced
• 2 tbsp half and half
graham cracker crust:
•1 1/2 cup graham cracker crumbs
• 1/4 cup sugar
• 1 stick butter, room temperature

how to make:
• mix crust ingredients together and press very firmly into your pan and bake for 10 minutes at 350 degrees.
• remove from the oven and let rest for 5 minutes. we pulled the crusts out of the pan to make assembling them easier but you can also leave them in the pan as you top them.
• melt 1/2 cup chocolate chips and spread over the bottom of your crusts. you can use more if needed.

• sauté 1 of the sliced bananas in the half and half and mush it. spread this on top of the chocolate layer. add sliced bananas in a circle on top.
• blend the cream cheese and powder sugar, add vanilla and cream together. add peanut butter and mix well. in a separate bowl whip the heavy cream until medium peaks form. fold the cream into the peanut butter mixture. you can either spread this on top or use a pastry bag to pipe this on top of the mini-pies. chill until firm.
• melt the last half of the chocolate chips and put into a plastic bag. clip off a tiny corner of the bag and squeeze it on top of the pies in whatever pattern you desire. you could write a phrase, etc. chill again, serve and enjoy!
