BRI’S BAKED EGGS

hi guys, bri here. i’ve been on a baked eggs KICK lately. i can’t stop trying different variations and people are always asking me how to do it…so let’s make some!

we made 4 different kinds, but really the options are endless. you will see how easy it is! these recipes are for 1-2 people. but i would say 2 eggs per person is best. okay, first up…

PROSCIUTTO AND GOAT CHEESE BAKED EGGS

prosciutto and goat cheese baked eggs:
• 2 eggs
• 3 slices of  prosciutto
•2 cubes of unsalted butter
• 2 tablespoons heavy cream
• 2 tablespoons goat cheese
• 1 cup spinach
• fresh sprigs of thyme

preheat oven to 350. in a small saucepan, sauté the prosciutto on medium to low heat for about 3 minutes. remove from heat and set aside. in the same pan with a bit of olive oil or butter sauté the spinach for 3 minutes or until it has cooked down. set aside.

butter your choice of ramekins and begin to layer the ingredients. first with the prosciutto, spinach, egg, goat cheese, garnish of thyme and one tablespoon of heavy cream per ramekin. no need to salt this dish as the meat and cheese will have plenty!

bake for about 15 to 20 minutes, rotating the ramekins half way through.

MUSHROOM AND TOMATO BAKED EGGS

mushroom and tomato baked eggs
• 2-3 eggs
• 2 tablespoons heavy cream
• 1 large handful of basil chopped
• 1 cup cherry tomatoes
• 1 cup shredded mozzarella cheese
• 2 cubes of butter
• salt and pepper

preheat oven to 350. in a pan cook down the mushrooms on medium heat, add a pinch of salt as it will help draw out some of the water in the mushrooms. set aside ( as an option you could also sauté the tomatoes if you would like a more roasted flavor)

butter the ramekins of choice and layer with the mushrooms, tomatoes, eggs, and cheese, salt and pepper to taste.

bake for 15-20 minutes, once removed from the oven garnish with basil and enjoy!

MEXICAN BAKED EGGS

mexican baked eggs
• 2-3 eggs
• 1 cup chorizo
• 2 tablespoons heavy cream
• 1 tablespoon green green onions diced
• 1/2 cup cilantro diced
•1/2 cup red onion diced
• 1 cup queso fresco
• 1 avocado
• lime wedges

preheat oven to 350. in a pan sauté the chorizo for about 3 minutes, set aside. butter your ramekin of choice and begin by layering the chorizo, eggs, heavy cream, and queso fresco. bake for about 15-20 minutes, rotating half way. bake for an additional 5 minutes if you like them well cooked.

once removed from the oven, garnish with green onions, cilantro, queso fresco, and red onion. serve with sliced avocados and lime wedges. Also goes great with hot sauce!

THE AMERICANA BAKED EGGS

the americana baked eggs:
• 2-3 eggs
• 5 fingerling potatoes
• 1 cup spicy pork sausage
• 1 cup shredded cheddar
• 2 cubes butter
• 1 tablespoons fresh chives
• 2 tablespoons heavy cream
• a dollop of crème fraiche

preheat oven to 350. sauté the pork sausage on medium heat for about 3-4 minutes. set aside. cook the potatoes in boiling water until tender when poked with a fork. set aside and slice potatoes.

butter your ramekins of choice and layer with the sausage, potatoes, shredded cheddar cheese, eggs, and heavy cream. bake for about 15-20 minutes, rotating half way. serve with chives and a dollop of crème fraiche.

you gotta try this! so satisfying when you take them out of the oven.

    I was just talking with someone about poached eggs, my fav, but these look delish! One note, just so you’re aware, the Americana recipe lists mozzarella as the type of cheese, but in the instructions (& image) cheddar is listed. I think cheddar would be yum with the pork/eggs combo, but either would be great!

    Is that really 2 cubes of butter for the prosciutto and cheese dish?

    This is perfect! We eat eggs every morning, and I get so bored with feeling like I’m eating the same thing over and over. I’m always looking for new things to do with them. All four of these look great 👌🏼

    Yummmm! I’ve been making these, thanks to your Instagram stories!, and even made some for my own blog! I love the Mexican and Americana ones you made! I feel like sautéing sliced potatoes with some herbs in a pan before baking would be delish too. Can’t wait to try <3 And hope you've been feeling better these days. The darkness is no joke!
