happy 2017! we’re feeling excited and ready to share another year of recipes with you. in 2016 we really worked to make our recipe collection approachable and balanced and that’s something we’re committed to continuing in 2017. we want to present ingredients, ideas, recipes and companies that we’re currently using in our own kitchen and hopefully inspire you to keep creating on your own. we’re always looking for input and suggestions so please feel free to leave a comment!

this post is extra exciting because as a thank you for following along with us we’ve partnered with Vitamix to giveaway one of their new new A3500 blenders to a reader! it’s a staple in our kitchen and used to make all three of the recipes below.

one of my intentions for the new year is to try to pack my lunch for the office. it’s more economical, healthier and also helps to avoid skipping meals (which always leaves me tired and grumpy). we came up with three items that are simple to make, hold up well in the refrigerator and can be kept for a few days so you can make a bunch and eat it throughout the week. we hope you enjoy! p.s. you can buy the eco friendly lunch box, here

riced cauliflower bowl:

this was the first time that i made cauliflower rice on my own and i was SHOCKED at how easy it was and how well it turned out. i know people always say things like this but it’s true – you won’t miss real rice with this recipe.

what you’ll need: 
• 1 head of cauliflower, roughly chopped
• 1 red bell pepper sliced and deseeded
• quarter red onion sliced
• 1 cup canned black beans, drained and rinsed
• 1 cup canned whole corn drained and rinsed
• half avocado diced
• 3-4 kale leaves de-stemmed and chopped
• 1 lime
• 1/2 teaspoon cumin
• 1/2 teaspoon chili powder
• salt to taste
• 2 tablespoon olive oil

heat olive oil on medium heat in a medium sized skillet. Sauté the red bell pepper, red onion, and kale. squeeze half a lime and salt to taste. set aside.

in your Vitamix, set on level 4 gradually drop small cauliflower florets until all the pieces have been finely riced. this step is important, don’t put all of the cauliflower in at once!

In a saucepan, heat 1 tablespoon of olive oil on medium heat, once heated toast the riced cauliflower for about 4-5 minutes. mix in the cumin and chili powder, and 1 teaspoon salt.

to assemble, place the diced avocado, corn, black beans, sautéed veggies and cauliflower rice in a food safe travel container. place the remaining lime to garnish. we also served ours with a side of salsa and chips.

As an option, you could also use the light jalapeño ranch dip as a dressing for the riced cauliflower bowl.

light jalapeño ranch dip:
we used the jalapeño dip with both the collard green wrap and the cauliflower rice bowl. it’s also great as a dip for your corn chips!

• 1 cup greek yogurt
• 1/4 cup chives diced
• 2 cloves garlic
• 1 teaspoon salt:
• 1 teaspoon onion powder
• 1/2 jalapeno seeded
• 1/2 lemon squeezed
• quarter cup buttermilk
• crack of pepper

In the Vitamix, add all the ingredients minus the buttermilk. Put the blender on a low setting until the mixture is smooth, then as the Vitamix continues to run pour the buttermilk in a slow steady stream, stopping to scrape the sides with a spatula. mix until incorporated.

cashew butter:
make this at home and keep a jar in your work fridge to pair with sliced apples, on toast with bananas or to eat by the spoon when you need something to tide you over. it’s the perfect snack!

what you’ll need: 
• 2 cups roasted and salted cashews
• 1/4 cup of coconut oil (melted)
• 1/2 teaspoon vanilla
• 1/2 teaspoon salt
• 1 tablespoon raw honey

start by placing your cashews in your Vitamix and slowly increase the speed from 2 – 8 stopping every now and then to scrape the sides. this will take around 5 -8 minutes, once it has a slightly creamy texture add all remaining ingredients except for the coconut oil and blend again. if the consistency is dry slowly add the oil while the Vitamix is running. store in an airtight container.

collard greens wraps:
this recipe is killing two birds with one stone – eating more veggies and packing a lunch! blanching the collard greens makes them easy to wrap and the creamy avocado and the spicy jalapeño dip bring it all together nicely (and guilt free).

what you’ll need: 
• 2-3 large collard greens leaves, de-stemmed
• 1/2 cup sprouts
• 1/2 cup chopped purple cabbage
• 1 yellow bell pepper sliced
• half an avocado sliced
• 1/2 cup lettuce diced

blanch the collard greens for a few seconds to soften them a bit. to assemble, place your ingredients on one side of the collard greens and tightly roll from one end to the other. slice in half (we wrapped ours using parchment paper). serve with the light jalapeño ranch dip.

    This week my go to lunch has been a rice bowl packed with veggies. I make a big pot of brown rice on Sunday and roast veggies throughout the week as needed. I love riced cauliflower (makes a great light “mashed potato”!) but my blender can’t handle it so I buy it frozen. Would love a Vitamix to make it myself!!

    We have a fridge at our studio, so I like to make a big pasta salad on Sunday night with lots of veggies and beans, and then take that along with a big box of salad greens. Through the week I just put a big handful of greens in a bowl, and top with pasta salad and a little avo and something crunchy! So easy and I can mix it up each week!

    Buddah Bowl made with brown rice, lemon garlic kale, roasted sweet potatoes, avocado and a dollop of homemade hummus. Yum!

    I make this really easy vegan broccoli soup.
    It’s 1/3 cup onions, 1 clove garlic, 1 tbsp olive oil. Brown.
    Add broccoli (I usually have a frozen steam bag that I pop in the microwave beforehand), 1 cup vegetable broth, let simmer for 10 mins.
    Add 1 cup almond milk, 1/4 cup nutritional yeast, 1 tsp cayenne (if you like it a little spicy), and salt and pepper to taste. Keep on stove for 5 more minutes.

    Then I stick like 3/4 of it into my blender and pulse a couple times. Add back to original pot and stir it all together. It’s really good! Sometimes I add tofu or vegan pepper jack cheese.

    One of my favorite go-to lunches is Jessica Koslow’s “Kabbouleh” from Everything I Want to Eat. I normally double the recipe and add a bit more brown rice. One batch will be enough for a five day work week. The best part is you can eat it cold and add toppings/meat to it each day to change it up. It’s healthy and refreshing!

    Love a good sushi bowl! I use brown rice and kale, mixed together with diced avocado, sesame seeds, torn seaweed, and sesame ginger dressing. You can throw in smoked salmon if you have it on hand. Thanks for hosting this giveaway!

And then I either put it in a sandwich or have gluten free multigrain crackers with a cheese stick and strawberries on the side. Yum! (Ps.     My go to is a salad/grain/fish combo. Usually it’s arugula, avocado, tomato for the salad. Topped with quinoa for grain. And the fish is a mix between canned salmon, tuna, or smoked sardines. For dressing, I use whatever dressing my husband blends up for the week! (This week is ruby red grapefruit vinaigrette!)

    My current absolute favorite go-to lunch recipe is something simple for the girl (or guy) on the move and that is.. *drumroll please*… sandwiches! Honestly sandwiches are probably one of the greatest inventions because you can change it up so many ways.     a green leafy salad is my go-to lunch!

    My favorite go-to lunch recipe is an avocado bowl tuna bowl!! If you don’t like tuna, you can sub it with your favorite chicken salad recipe!

    I like to use fresh tuna, bake tuna loin or filet at 365 degrees Fahrenheit, for 15-20 minutes or until tuna begins to flake

    Once cooked and cool,flake and transfer to mixing bowl, mix with mayo, sour cream, fresh dill (or dry if you don’t have any fresh), cracked pepper, salt, a squeeze of lemon, shredded pepper jack.

    Once i have my tuna mix, I pack it in a container ready for lunch, along with an uncut avocado, and extra shredded cheese on the side, plus some salsa if I have some. Surprisingly, the salsa gives it an extra zing of acid to the creamy avocado and tuna.

    At work, I cut my ripe avocado, de-seed it, and scoop my tuna mix into the middle of my avocado, sprinkle on some cheese and salsa, and enjoy! Using the avocado like a bowl saves on dishes so I don’t have to wash more dishes when I get home.

    Anything easy! Usually a tofurkey sandwich, carrots and a banana.

    This week my go-to has been veggie tofu rice wraps with a spicy peanut dip. Yum! I meal prep on Sundays so it’s the perfect opportunity to make in bulk and eat throughout the week. Including a variety of natural colors in my lunches is my goal. The rice wraps had carrots, avocado, beet, tofu, red onion topped with black sesame seeds. Easy to make, and they last all week!

    My go to lunch is a leftover soup. Whatever chicken or veggies are left are used to make stock for the soup. Then I include a pepper and onion mix with leftover potatoes or veggies (cabbage, peas, green beans) or both. I season it up with garlic, pepper, salt, and sometimes liquid aminos.

    My favorite go to lunch is an avocado with baked egg. You simply split the avocado, and take the pit out. Then break an egg into either side, and bake on 350 until the egg isn’t runny. So good! You can even do half for breakfast and half for lunch.

    My favorite go to lunch is a salad with spring greens, avocado slices, tempeh and carrot ginger miso dressing that I would make in the Vitamix. Blending the carrot, ginger, and miso with some lime juice, sesame oil and liquid Braggs. MMMMMM so good.

    93% of the time I have tacos on my mind. How can I make them, where can I get them, is it ok to have them multiple days in a row? However. I have to reel myself in because contrary to popular belief, tacos in excess do have mild side effects such as weight gain.
    SO I bowl it up. Brown rice, cilantro, tofu, kale, avocado, and a fresh salsa is my regular go to.

    I love to make salads, but when I need something different, I like to make what we call a “Hangover Fix.” It’s whole grain bread, toasted, a tiny bit of olive oil mayo on both sides, carmelized onions, kale or spinach, cheddar cheese, and sliced turkey sautéed with chili pepper and a little bit of brown sugar. It’s the perfect combination of sweet and savory! So delicious.

    The Kale Glow Bowl from the glowing fridge is awesome! You make some quinoa with sesame oil and put everything on top of it. To make the topping, you mix together red onion, garlic, kale, broccoli, tempeh and tamari (or soy sauce or liquid aminos) with a sauce made of lime juice, a little bit of Dijon, ginger, black and red pepper and then top the dish with sesame seeds.

    You can make it for dinner and use the leftovers or make it on Sunday and put it in the fridge already separated for a few days of lunch.

    My go-to right now is chickpea “tuna” on crackers and some fruit! My blender is also on its last leg with all my morning smoothies, it’s a cheap off brand one so this would be a great way to start off the new year! I’ve heard such wonderful things about the Vitamix brand.

    Oh man, I have been having a long distance love affair with this blender ever since they introduced it. It is BEAUTIFUL and would get so much use in my kitchen. My go to lunch is a ‘tuna salad’ made with tuna, lemon juice, plain greek yogurt and diced peppers. Serve on a bed of lettuce with a slice of ezekiel toast. Delish! And healthy. 🙂

    I try really hard to make this thing I call a ‘protein power lunch’ which is a sweet combo of thyme roasted sweet potatoes, kale salad, chickpea salad, roasted beets + jalapeno, quinoa, hummus and a hard boiled egg. The spicy + sweet combination of all the pairings means the taste never gets old.

    My go to lunch/any meal is a bowl with some grains(quinoa, couscous, barley), lots of leafy greens, CHICKPEAS (a must!), tons of veggies (peppers, tomatoes,carrots), sesame seeds, cilantro, chives and some creamy tahini or avocado dressing. Any dressing works great and if you add an egg to it it becomes a breakfast bowl! <3

    Toast bread hard (almost, but not, burnt), smash avocado on top with fork. Salt and pepper avocado. Halve grape tomatoes and pile on. Shake dressing well, drizzle over tomatoes.

    Those lunches are so beautiful and inspiring! My go-to lunch is a salad with ingredients I find at the farmers market each week. It’s a great way to add variety based on what is seasonable. One of my favorite salads is mesclun and arugula with cucumber, cherry tomatoes, shaved carrot, red onion, cilantro and avocado with a cumin lime vinaigrette. Sometimes I’ll add quinoa or roasted sweet potato to make it heartier. It’s simple, healthy, and full of flavor! I’ve always loved bringing homemade lunches and it’s great when you can create exciting new meals!

    i make my eggs in a cast iron skillet, heat that sucker up with avocado oil and crack the egg. leave it for about five minutes. that’s literally it. let’s move on to the taters + carrots + zucchini chips. these are MONEY! lather them up with avo oil, chipotle powder, curry powder, black pepper, pink sea salt and roast for about 35 min at 425! except for the zucchini. Take those out a little earlier! Sauté some collard greens with lemon, ghee, turmeric and black pepper. add some chipotle bean dip in yo bowl. It’s that easy y’all!

    Rice bowls! I usually top brown rice with leftover veggies (roasted, steamed, raw), an easy vinaigrette or peanut sauce, shredded cabbage, kale or sprouts, and an egg (poached if home, hard boiled if a picnic). A little Shark brand Sriracha. Sesame seeds, cilantro if I have any. This is also such a kid friendly meal. They choose the parts they want to add, and because they have ownership, it goes down easy. Big hit on the playdate scene too…

    A rotation of nutrient dense Buddha bowls with a homemade tahini based dressing or sauce each week that I meal prep ahead of time. Perfect to keep me powering through the second half of my day!

    Tuna croquettes sans breading! It’s super easy. Two eggs or two egg whites, tuna canned or grilled then flaked, seasoning to taste, sautéed onions & peppers. Form patties and cook in a pan covered until brown on both sides and firm. Rice cauliflower in the processor, throw in an egg or whites and carrots, peas, pepper, & soy sauce. Box and toss that croquette on the cauliflower. If you’re feeling like a simple non traditional salad, chopped cabbage pickled overnight with peppers is nice and adds a little bite to the rest of the meal.

    My go to lunch is a simple salad – prepared the night before! I add in whatever veggies and protein I have leftover in the fridge.

    You guys…falafel. The various ways you can use it Monday-Friday is amazing. On it’s own, topped with shredded lettuce, carrots, and cheese, w/ taziki on the side, or on top of a hearty salad, in a collard green wrap, or a pita of course if you’re going WITH the gluten 🙂 My hubby and I use this recipe for our meatless meal night as well and I’m usually asked to bring this to parties or when I’m hosting myself.

    1 15oz can garbanzo beans
    1 onion chopped
    1/2 cup fresh parsley
    2 cloves of garlic chopped
    1 egg (to make vegan mix 1 tablespoon flax seed w/ 2 tablespoons of water & let sit for a minute, do this VERY often)
    2 tsp cumin
    1 tsp ground coriander
    1 tsp salt
    1 dash pepper
    1 pinch cayenne pepper
    1 tsp lime juice
    1 tsp baking powder
    1 Tbsp olive oil
    1 cup dry bread crumbs

    – In a large bowl mash chickpeas until thick and pasty; don’t use a blender, as the consistency will be too thin. In a blender, process onion, parsley and garlic until smooth. Stir into mashed chickpeas.
    -In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder. Stir into chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together; add more or less bread crumbs, as needed. Form into balls and then flatten into patties.
    -Heat 1 inch of oil in a large skillet over medium-high heat. Fry patties in hot oil until brown on both sides. Serve two falafels in each pita half topped with chopped tomatoes and cucumber sauce. ***I just add enough olive oil so bottom of pan is covered and fry lightly.

    I pack stacked salads every day: fresh seasonal greens (from my garden when possible!), layered with herbs, nuts or pumpkin seeds, fruit, and goat cheese.     One of my favorite go to lunches is hummus with almost anything! I like to add different flavors to my hummus like olives or hot gerdenerra. It’s good with all kinds of veggies and for protein I’ll being a hard boiled egg.

    For my go to I always keep it simple. I love a classic open-faced sandwich because there are so many options! Right now I have two favorites, cracked wheat bread, chunky natural peanut/almond-butter, banana slices, honey, and to make it not seem like I’m 5 I add chia seeds to it!     Loving Pozole for the People a tomato based vegan soup base. If you’re a meat eater like me you can add shredded pork or chicken.     Greek Avgalemono Soup- would be way way faster if I had a Vitamix!
    I make big batches and send it hot to school with my kids. It is the envy of the lunch room. So simple to make, packed with protein and nutition.

    Boil down the chicken with onion, celery, potatoes(the kitchen sink) strain out the bones and add rice carrots and bone broth with your preference of seasonings. Let that boil for 20 min and add lemons. Lots or just to taste.
    Next wisk 2-3 eggs in a side bowl. Slowly take the hot broth and wisk in soethe egg doesn’t separate. Once the egg is diluted with broth, add it to the soup and enjoy!

    One of my biggest go-tos is a filling smoothie for lunch! Since most days I am running around like a crazy in the mornings, it’s easy to throw some goodies in a blender and bring it to work in a mason jar. My current favorite is almond milk, frozen banana, frozen raspberries, handful of spinach, a dash of maca, some cacao plant based protein, and maybe a little nut butter if I am feeling fancy 🙂

    Our go to easy vegetarian lunch recipe is lemon chickpea artichoke salad. Super simple! Whisk fresh squeezed lemon and a dash of olive oil with salt and pepper and a handful of chopped parsley. Add a can of chickpeas (drained and washed) and chopped artichoke hearts (I use ones that are in water). Mix together. Sometimes I add kalamata olives. I add a packet of Omega 3 nut mix from Trader Joes. It’s a basic recipe that you can add or remove lots of ingredients too. Travels great but don’t add nuts until right before eating

Every Sunday, I make a pot of quinoa, lentils, barley, wild rice, or whatever to use as a base, then throw in some veggies and protein that I happen to have from my dinner or meal prep leftovers.     My go to lunch to bring to work is shredded salsa chicken made in the crockpot on Sundays. Just put in chicken breast and green or red salsa and let it cook on high for 4 hours. I put this in bowls with cauliflower rice or cilantro brown rice, avocado, black beans, tomato, corn, and bell peppers or with a salad for a taco salad. Easy and can last for the whole work week with different variations for lunch 🙂

After everything is roasted, I store it in multiple containers so it’s ready to go. When I’m ready to heat it up, I usually throw in any leftover protein, a little bone broth to add moisture and serve it with a generous scoop of kraut for a happy gut. SO delicious!

    My go-to lunch recipe is a nut butter, honey, banana wrap or sandwich. I love homemade almond/cashew butter and would LOVE to be able to make my own! It’s a great comfort food that gives me enough natural protein and sugar to provide a pick me up during that midday slump!

    To make it with a twist- add some feta cheese or tahini.

    I love red coconut curry with cauliflower rice! Curry is a yellow onion and three chicken breasts, diced and sautéed, then add a can of full fat coconut milk and a large can of crushed tomatoes and curry powder, cayenne pepper and red pepper flakes. Easy! The cauliflower rice is also simple. Chop it up and sautée it in some ghee or butter with salt and pepper. Pour the curry on top. Makes more than enough for leftovers!

    One of my fav dishes to make is chicken with a green veggie side (peas, green beans, etc.), and then I also make a creamy puree with cauliflower and I mix it with some quinoa. Winning a Vitamix would be a breeze making the cauliflower puree!

Your ingredients are rotisserie chicken, shredded Monterey Jack cheese, slices of bacon chopped, chopped green onions, shredded romaine lettuce, flour tortillas, and ranch dressing.     Leftovers ! I always try to make extras of dinner so that we have something for lunch the next day. Every other week or so, I’ll make a big batch of soup, curry, chili, etc to freeze into individual portions for emergency lunches.

    If I don’t have leftovers on hand, my go to lunch is a bean burrito-I use the uncooked tortillas, canned black beans and monterey jack. Cook the tortillas, add the beans and grate some monterey jack on top. Roll it up and heat for 30 seconds in the microwave. I like to dip it in whatever sauce I have on hand-salsa, jalapeno ranch, or even ketchup.

I normally bring a green smoothie to work everyday for breakfast/lunch and have converted a lot of people in my office to do the same. 🙂 I usually put in kale, spinach, carrots, yogurt, homemade soy milk, chia seeds, and some frozen berries. It’s good and filling but my blender is bad and I often end up getting chunks of carrots in my smoothie. The awesome Vitamix would definitely be a good solution!

    My go to lunch is veggie soup. It’s quick & easy, packed with so many nutrients, fiber, & total deliciousness!! Chicken stock is usually the base then I add the veggies I have on hand.. cabbage, green peppers, green beans, tomatoes, carrots, garlic.. some is puréed but I like them chunky which is easy in the Vitamix. Put those veggies in at the end on 2-4 setting and watch for the consistency you prefer. And yes some of the veggies I cook ahead to soften or sauté. Sometimes omit meat if not on hand because protein is found in sommany veggies anyway. Try the Chicken tortilla recipe by Vitamix.. a definite got to😊
