STRAWBERRY TARTLETS
i’m obsessed with these strawberry tarts. so beautiful and so easy! i have a lot of events coming up that i need to bring a dessert for and i was looking for something simple and impactful that utilizes that fresh produce of the summer months and these little tarts hit the spot. we used trader joe’s lemon curd which is already made and sold in a jar but you could make your own from scratch (this is a great one!). eat up! – joanie

how to make them:
• you can either buy frozen pie crust or you can make this super easy dough from scratch. it almost tastes like a short bread cookie.
• roll out your dough, turn your tins upside down to cut a circle and place the dough inside your greased tin. you’ll want to put some rice on your dough before it cooks to keep it from rising too much. we baked ours at 350 for 20 minutes.
• take 1 pint of whipping cream and beat on high until stiff peaks form. fold in 1 cup of lemon curd and taste. add more if needed.
• fill the tarts with the cream mixture and add sliced strawberries on top. garnish with mint!
we ate them immediately but we also stored them in the refrigerator over night and they were good the next day too.
