HEALTHY FRIED RICE

i’m a big fan of fried rice, and often make the trader joe’s frozen version or order it take-out style which can get expensive and unhealthy. enter this recipe; the healthier version, made with brown rice, loaded with veggies and fried in coconut oil. it’s a home-run. we listed the veggies we used but this recipe could be made a number of ways, with whatever produce you have floating around in your fridge. i like the idea of using a hearty green like chard or kale as those pack  anutritional punch but can be boring to consume. i also think that topping the rice with a couple of fresh veggies before you serve it (we used cilantro and red onion) keeps the flavor profile more interesting. – joanie

makes 6 servings 

ingredients:

• 3 cups chopped chard (cleaned and stems removed) 
•  half white onion diced
•  1-2 inch ginger peeled and minced
•  3 garlic cloves diced
•  2 cups brown rice uncooked
•  3 eggs (+ additional if you want to top yours with a fried egg)
• 2 cups mushrooms
• 2 tablespoons coconut oil
•  1 tablespoon chili oil
•  2 tablespoon soy sauce
•  salt and pepper to taste
• chopped red onion for garnish
•  fresh chopped cilantro for garnish

• In a medium sized pot mix 2 cups of uncooked brown rice with 5 cups of water. Cook on medium to low heat for about 40 minutes or until the water is absorbed and the rice is tender. Set aside. In a large stainless steel skillet add 2 tablespoons of coconut oil on medium heat. Add 2 cups chopped mushrooms, half a white onion diced, ginger, and garlic. Add a dash of salt and sauté for about 5 minutes or until the onions begin to caramelize.  Add the chard and took until tender, about 2 more minutes.

• Add the chili oil and mix in the cooked brown rice. Let it cook together for 3-5 more minutes, it’s okay if the rice starts to brown. In a separate bowl, beat 3 eggs until fluffy and add to the skillet. Fold in all the ingredients until well mixed. Add soy sauce to taste and serve.

we topped ours with fried eggs and garnished with fresh cilantro, diced red onion and shiracha!

    Yes, yes, and yes! I love me some fried rice, but always feel so guilty eating it. I definitely need to try this healthy version!

    this is perfect. i recently signed up for a csa and honestly have trouble finishing all the veggies before they start to go bad. now i’ll just whip up a big batch of veggie fried rice!
