ROASTED CHICKEN DINNER

WHO KNEW that making roasted chicken dinner was THIS easy?! i love buying the rotisserie chickens from the grocery store and always just assumed that making one at home would be too much work. this one turned out beautifully, fed 6 people,  with plenty leftover and we used the bones to make chicken stock, an all around win!

Ingredients:
• 1 whole chicken (our was 3.5 lbs, so something around that weight)
• 2 cups Brussels sprouts
• 1 pound small red skinned potatoes
• 1 pound small purple skinned potatoes
• 3 lemons
• 1 garlic clove
• 1 large handful fresh sprigs of sage, marjoram, rosemary (finely chopped)
• 4 carrots
• olive oil
• salt and pepper to taste

• Preheat oven to 450 degrees. remove the giblets from inside the chicken and pat it dry. In a clean kitchen surface, generously olive oil with the freshly chopped herbs on the outer surface of the chicken, make sure to get below the skin as well! Salt and pepper to taste. Place a few cloves of garlic and the lemon (sliced) with the skin on it, inside the chicken. We used a cast iron skillet to roast our chicken. We found that the vegetables benefited from the juices of the roast chicken and added a tremendous amount of flavor. We put a small bed of brussels sprouts and some red skinned and purple potatoes around the chicken before roasting.

• Since we were serving this to all our friends in the studio we decided to put the remaining vegetables on a cooking sheet, drizzled with olive oil, fresh rosemary and salt. Cook in the preheated oven for about 35 minutes or until they are tender when poked with a fork.

  

• To roast the chicken lower the preheated oven to 400 degrees. Place the chicken on the lower rack and bake for 50 minutes. With a meat thermometer, it should read at 165 degrees Fahrenheit at the thickest part of the thigh when done. Let the chicken rest for at least 15 minutes before carving. Serve with roasted vegetables and enjoy! We hope you try this delicious recipe for your dinner or holiday gatherings.
