I’m a morning person, and LOVE a good hearty breakfast that will keep me full through a long, hard day of work (or weekend of relaxing). By the time your coffee is brewed, you’ll have your plate ready to go with these coffee waffles. Yes, there is coffee in the batter! It never hurts to have a little extra boost in the morning, right?! – Leslie

Coffee Waffles


• 1 cup flour
• 1 T. baking powder
• ¼ t. salt
• 2 t. instant coffee crystals
• 1 egg
• ½ cup water
• ½ cup cream (french vanilla or ½ cup milk with 2 tsp. vanilla)
• 1½ T. maple syrup

how to make the waffles…
Mix dry ingredients in medium bowl.  Mix wet ingredients in small bowl.  Pour wet ingredients into dry.  Whisk.  Simple as that!

Preheat waffle iron.  Spray with non-stick spray before each use.  Pour 1/3 cup of batter in center of waffle iron.  Cook until golden deliciousness is achieved and let the coffee aroma permeate the air.  Might as well put a pot of coffee on too!

Berry Maple Syrup

• 2 cup fresh or frozen mixed berries
• 1½ cup maple syrup

how to make the syrup…
In a small saucepan over medium-low heat, heat berries until they start to breakdown.  Add maple syrup and simmer until warmed through.

Plate up a couple of waffles, top with a heaping spoonful of berries and drizzle the berry maple syrup all over the waffles.  Enjoy with your favorite cup-a-joe!
