so last week i finished a very intense, month long styling job and decided to do a juice cleanse. four weeks of photo shoot catering had not been kind to my butt or my overall state of mind.

the cleanse was 3 days of just juices, and yes, the thought of that kind of scared me. as it turns out, it was surprisingly easy and really, really delicious. about half way through, something occurred to me.  i realized that a lot of these juices would be even better with a little alcohol in them.

i’ve even considered ordering the cleanse again, just so i could drink 6 relatively healthy cocktails a day. while i contemplate that move, I’ve decided to pick one of my favorite juices and turn it into a yummy cocktail. so here it goes…


what you’ll need:

• 1 pineapple, cubed or 16 oz of pineapple juice
• 2 granny smith apples, peeled, cored and cubed or 8 oz of apple juice
• 12 mint leaves, torn
• 1 lime, cut into 4 sections
• 6 oz of light rum

what to do:
so you’re at a crossroads.  you’ve got two choices.  if you are super fancy like me, you have a juicer (which you have maybe used twice in 4 years), and if not well, if not, you’ll have to deal with the shame involved there.

if you have a juicer:
• fill 4 fancy glasses with ice
• squeeze a lime quarter into each glass and toss in that lime
• add 1.5 oz of rum as well as a few pieces of the mint leaves
• mix it up.

then:
juice the pineapple, apple and remainder of the mint.  pour into the glasses and stir again.  viola.  the pineapple express.

if you don’t have a juicer:
• divide the torn mint equally among the 4 glasses.
• add 1.5 oz of rum to each glass
• muddle the mint in the glasses to release the flavor
• add the ice and the lime as described above
• add 4 oz of pineapple juice into each glass as well as 2 oz of apple juice
• stir
• share
• drink!
